3 cups sliced red cabbage and green cabbage
1 cup grated carrots
1/4 cup thinly sliced green onions
1/2 cup whole almonds, toasted and chopped
Citrus Dressing
1/2 cup vegetable or almond oil
1/4 cup lime juice
2 tsp sugar
2 tsp finely chopped fresh cilantro
2 tsp finely chopped fresh mint
1/4 tsp Salt and pepper, to taste
Combine salad ingredients in a large bowl. Whisk together dressing ingredients and pour over salad. Toss before serving. Serves 4-6
