BUTTERMILK SOAKED BONELESS FRIED CHICKEN

Category: Chicken

Soak overnight:
1 1/2 to 2 lbs boneless, skinless chicken breasts, cut in half-and-half
1 quart buttermilk
4 tsp salt

Mix together:
COATING
2 cups flour
2 tsp garlic powder
1 tsp Old Bay seasoning, salt and pepper
1/2 tsp marjoram and thyme
1/4 tsp celery powder

Oil for frying

With coating mixture, coat each chicken piece and place on a wire rack while oil is heating in a skillet that is about 1/3rd filled and temperature is 350 degrees.

Fry chicken. Turn once. Cook 6-8 minutes on each side. If chicken browns to quickly turn down the heat. Drain well and serve. Serves 4
