SAUSAGE, APPLE AND CABBAGE SKILLET DINNER

3 jonathan or golden delicious apples
2 tbsp butter
6 cups shredded green cabbage
1/2 cup thinly sliced onion
2 tbsp water or apple juice
1 tbsp cider vinegar
1/4 tsp salt and pepper
1 lb fully-cooked smoked sausage or bratwurst
2 tbsp minced parsley
Prepared mustard
With 2 apples, peel, core and grate them. In a large skillet, melt butter over medium heat. Add grated apples, cabbage and onion; saute 5 minutes. Stir next 4 ingredients into apple mixture. Pierce sausage with a fork and place on top of mixture. Cook, covered, 10 minutes or until cabbage is just cooked and sausage is heated through. Core and quarter remaining apple; add to skillet mixture along with the parsley. Cook, covered, 2 minutes. Garnish with quartered apple. Serves 4
NOTE: This is good with drained and rinsed sauerkraut substituting the cabbage
