THREE CHEESE PASTA WITH HAM AND PEPPERS

1 lb shell pasta, cooked slightly uncercooked
1/2 onion, chopped
2 oz sliced ham pancetta or Canadian bason
1/2 cup fire roasted red peppers, chopped
1 cup chicken stock
1 tsp sage
1/2 tsp cayenne pepper
4 tbsp fresh Italian parsley
1 cup ricotta cheese
1 cup grated parmesan cheese
1cup shredded mozzarella cheese
1 egg, beaten
Salt and pepper, to taste

While pasta is cooking, saute onion in 1/2 cup chicken stock, about 4 minutes, or until tender. Add ham, cook 2 minutes. Add red peppers, remaining stock and seasonings. Simmer and reduce heat slightly, then removed from heat.

Combine ricotta, 1/2 cup parmesan cheese, egg, salt and pepper in a separate bowl for filling.

Combine pasta and pepper sauce. In a casserole dish, layer 1/2 pasta mixture, the ricotta filling and the remaining pasta mixture. Top with mozzarella and remaining parmesan cheese, and additional salt and pepper, to taste. Bake at 400 for 25 minutes or until golden brown and bubbly. Allow to cool for 5 minutes before servings. Serves 8
