CLAM DIP IV

Category: Dips - Seafood Cold

1 tbsp olive oil
1 cup finely minced yellow onion
1 tbsp finely minced garlic
2 tbsp heavy cream
1/2 lb cream cheese
1 lb lump crabmeat
1 tsp chopped parsley, chopped basil and chives
Dash salt, pepper and cayenne pepper

Heat oil in a saucepan and saute onion and garlic for 2 minutes, stirring to prevent browning. Add heavy cream and stir to combine. Add cream cheese and whisk until all the cheese is melted and is a smooth texture. Remove from heat and place mixture in a bowl. Let cool for 10 minutes at room temperature. Fold in crabmeat, herbs and seasonings. Serve immediately or refrigerate. Serve chilled accompanied by garlic herb toast.
