BAKED FIESTA SPINACH DIP

1 cup chopped onion
1 tbsp vegetable oil
1 cup chunky salsa; well drained
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
2 1/2 cups shredded sharp cheddar cheese or Monterey jack cheese
1 (8 oz) pkg cream cheese, softened
1 cup light cream
1/2 cup sliced black olives
1 cup chopped pecans

Preheat oven to 400. In a skillet over medium heat, saute onion in oil until tender; stir in salsa and spinach cooking for 2 minutes more. Transfer to a 1 1/2 quart dish. Stir in 2 cups cheese, cream cheese and olives. Sprinkle with pecans. Bake about 30 minutes or until hot and bubbly. Cover with foil last 15 minutes to prevent burning. Top with remining cheese. Serve hot.
