EASY CHEESE-ONION BREAD

3/4 cup onion, finely chopped
1 tbsp olive oil
1 1/2 cups buttermilk
1 large egg, lightly beaten
1 1/2 cups baking mix
1 cup sharp cheddar cheese, grated and divided
1/2 tsp. black pepper
2 tbsp Butter, melted

Preheat oven to 400 and lightly grease a 9-inch round baking pan; set aside. Sauté the chopped onion in the olive oil in a skillet over medium heat until golden brown, about 7-minutes. Set aside to cool. Blend together the buttermilk and egg in a large mixing bowl. Blend in the biscuit mix, sautéed onion and about 1/2 cup of grated sharp cheddar cheese. Pour the mixture into the prepared baking pan. Sprinkle the remaining cheese and black pepper over the top of the mixture. Drizzle the top with the melted butter or margarine and bake for 30 to 35-minutes or until golden brown. Let cool slightly before cutting into pie-shaped wedges to serve warm.
