SOUTHWESTERN BBQ CHICKEN PIZZA

1 pre-cooked 16-inch pizza crust
1 1/4 cup any barbecue sauce (see note)
8 oz grilled, cooked chicken breast (diced in 1-inch pieces)
1 small red onion, grilled and julienne cut
1 medium red bell pepper, grilled and julienne cut
2 roma tomatoes, julienne cut
8 oz shredded cheese (mozzarella-cheddar combination)
1 tbsp chopped fresh cilantro

Preheat oven to 400. On pizza crust, layer barbecue sauce, chicken, vegetables, cheese and cilantro. Cook in preheated oven 8 minutes or until cheese is well melted and crust is crispy. Makes 8 slices.
