MEXICAN PORK - Crock Pot

Category: Pork

1 lb pork boneless loin roast, cut into 1 inch pieces
1 (20 oz) jar salsa
1 (4 oz) can chopped green chilies, drained
1 (15 oz) can black beans, rinsed and drained
1 cup shredded Monterey jack cheese

Mix first 3 ingredients in a crock pot. Cover and cook on low for 4-6 hours, or until pork is tender. Stir in beans. Cover and cook 5 minutes longer or until hot. Sprinkle with cheese. Serve over rice or tortilla chips.
