KIELBASA CASSEROLE

1 large bell pepper, cut into 1 inch pieces
1 medium onion, cut into wedges
3 potatoes, peeled and cubed
Tomato wedges
12 – 26 oz kielbasa sausage
1/4 tsp salt and white pepper
1/4 cup olive oil
1/2 cup half-and-half

Preheat oven to 400. Place vegetables in a large bowl. Peel casing from sausage and cut into 1/2 inch slices. Add to bowl and sprinkle with salt and pepper. Toss with oil. Place in a casserole; cover and bake for 45 minutes. Stir in cream and bake an additional 10 minutes. Serves 4-6
