KIELBASA, CABBAGE AND POTATOES

1 tbsp oil
1 lb kielbasa, cut into 1 inch thick slices
1 large onion, chopped
3 large carrots, peeled and chopped
1 clove garlic, minced
6 cups cabbage, coarsely chopped
3 lb red potatoes, sliced
1 cup chicken broth
1/2 tsp celery seed
Salt and pepper, to taste

In a large skillet, heat oil. Add sausage and brown. Add onions and carrots, cook until onions are translucent. Add garlic and cook 1 minute. Drain and discard fat. Add cabbage, potatoes, broth and celery seed. Bring to a boil; reduce heat and cover pan. Simmer for 35-40 minutes or until potatoes and cabbage are tender. Check occasionally and add additional broth if needed. Season with salt and pepper. Serves 4-6
