LOBSTER DEVILED EGGS

2 dozen hard cooked eggs, peeled
2 (1 1/4 lb) lobsters, steamed, shelled and chopped
2 tbsp mayonnaise and capers
1 tbsp mustard
3 shallots, minced
1 bunch minced chives
Salt and pepper, to taste


Cut eggs in half lengthwise. Reserve yolks for another use. Mix together remaining ingredients. Fill egg whites with mixture. Garnish as desired. Chill until ready to serve.
