LEMON BASIL PAN POTATOES

2 medium red potatoes
1 mediu zucchini
1 tbsp butter and olive oil
4 green onion slices
1 tbsp garted lemon peel
1/4 tsp salt
1/8 tsp pepper
1/3 cup chopped fresh basil or parsley

Cut potatoes in half. Place halves cut side down and cut lengthwise into 1/8 inch thick slices. Pat dry; set aside. Cut zucchini in half lengthwise and place halves cut side down and cut crosswise into 1/4 inch thick slices. Set aside

Melt butter in oil in a skillet. Add potato slices and cook 6-7 minutes or until browned. Stir in zucchini, onions and next 3 ingredients. Cover and cook for 3 minutes. Remove from heat and stir in basi. Serves 4-6
