SPEEDY STEAK AND SPUDS

24 oz pkg frozen potato wedges, baked according to package directions
1 tbsp vegetable oil
1 lb sirloin steak, cut into strips
1/4 tsp pepper
1 1/4 cups water
1.5 oz pkg beef stew seasoning mix
1 (16 oz) pkg frozen vegetable medley, thawed
Sour cream
Sliced green onions
While potatoes are cooking, heat oil in a skillet over medium-high heat. Add steak and pepper. Stir-fry for 2 minutes or until steak is still pink in center. Remove from skillet and set aside.
Mix water and seasoning mix and pour into skillet. Add vegetables; cover and simmer 5 minutes or until vegetables are tender. Stir in steat to heat through. Arrange potato wedges on serving plates. Spoon steak mixture over potatoes. Top with sour cream and onions. Serves 4
