ITALIAN STIR-FRY WITH SMASHED POTATOES

Smashed potatoes
1 lb potatoes, unpeeled, cut into chunk and boiled until tender, drained
Salt and pepper, to taste
1-2 tsp olive oil, or to taste

Italian Stir-Fry
1-3 tsp olive oil
1 medium onions, thinly sliced
1 large clove garlic, minced
1/2 green or red bell pepper, thinly slices
1 lb seasoned vegetables of choise, cut into bite-size pieces
1/2 lb coarse ground chicken, pork or beef
1 tsp Italian hear blend, or to taste
Salt and pepper, to taste
1 tbsp minced parsley, garnish
Grated parmesan cheese

Stir-fry: Heat a large skillet with oil and add the onion and garlic. Cook on medium-high heat until onion begins to soften. Add bell peppers and vegetables and stir-fry for 1-2 minutes, or until vegetables just begin to soften. Add meat, herbs, salt and pepper, and continue to stir-fry until meat is cooked and vegetables are slightly crunchy. Taste and correct seasonings. Serve over smashed potatoes and garnish with parsley

Smashed Potatoes: Place potatoes on a serving platter and with a fork, smash them about 3-4 times to make a bead for the vegetables. Serve with salt and pepper, drizzle with olive oil.
