PATCHWORK POTATOES

4 cups warm mashed potatoes
4 tbsp butter, melted and divided
1 tsp chopped fresh dill
1/4 tsp pepper
2 (29 oz) cans sweet potatoes, drained
Grated peel of 1 lemon

Preheat oven to 350. Coat an 8 inch square baking dish and cooking spray. In a medium bowl, combine mashed botatoes, 2 tbsp butter, dill and pepper; mix and set aside.

In another bowl, mash yams, then add lemon peeled and remaining 2 tbsp butter; mix well. Spoon 5 equal-sized scoops of yam mixture into baking dish, placing one scoop in each corner and one scoop in the center.

Using a spoon, shape each scoop into a square. Place mashed potato mixture in the four emply squares, dividing it equally. Pat down evenly to fill any gaps, forming a checkerboard pattern. Bake 45-50 minutes or until heated through. Serves 8-10
