Shelly's Recipe

*MARGARITA DIP*

2 tbsp tequila and orange liqueur
1 tsp unflavored gelatin
2 tsp grated lime rind
1/4 cup lime juice
1 drop green food coloring
1 1/2 cups whipping cream
3/4 cup sugar

Stir together tequila and liqueur in a small saucepan; sprinkle with gelatin, and let stand 1 minute. Cook over low heat, stirring until gelatin dissolves. Stir in lime rind, juice and food coloring; cool.

Beat whipped cream on high until foamy; gradually add gelatin mixture and sugar, beating until soft peaks form. Cover and chill.

Serve with fresh fruit and Cinnamon Tortilla Chips (in recipe SNACK folder).
