GARLIC AND HERB ROASTED YUKON GOLD POTATOES

5 lb Yukon Gold potatoes
1/4 cup extra virgin olive oil
Salt and freshly ground pepper
2 cloves garlic, minced
1/3 cup chopped fresh herbs (such as rosemary, parsley, thyme, sage, basil)

Preheat oven to 375. Cut potatoes into bite-size chunks and toss with oil. Spread onto 2 large baking sheets and sprinkle with salt and pepper. Bake for 1 hour, stirring occasionally, until golden brown. Stir in garlic and cook for 5 to 10 minutes more. Remove from oven and toss with fresh herbs. Serves 8-10
