TURKEY SPAGHETTI CASSEROLE

1 pkg spaghetti, broken into small pieces and cooked in chicken broth until barely tender, reserving some liquid
1/4 cup butter
1 lb mushrooms, stemmed and sliced
1/2 cup chopped red bell pepper, celery and onion
1 can cream of mushroom or chicken soup
1/2 to 1 cup reserved pasta liquid
1 tbsp sherry
Salt and pepper, to taste
1 1/2 to 2 cups cooked turkey, cut into chunks
2 cups shredded sharp cheddar cheese
Parmesan cheese

While pasta is cooking, melt butter and saute vegetables until tender. Drain the pasta, reserving some liquid and add the vegetables, soup, some of the reserved liquid and sherry until smooth. Season with salt and pepper, add the turkey and shredded cheese.

Pour mixture into a casserole dish and sprinkle with grated parmesan cheese. Bake at 350 for 45 minutes to 1 hour.
