CHEESY SPINACH TARTLETS

Category: Quiche and Savory Tarts / Tartlettes

1 refrigerated pie crust

Filling
1 tsp olive oil
1/4 lb fresh spinach, stemmed removed and chopped
2 small shallots, diced
2 clove garlic, minced
7 oz feta cheese
3 large eggs
3/4 cup milk
1/4 tsp pepper

Cut pie crust into 5 inch rounds and press into 4 inch greased tartlet pans.

Heat oil in a skillets and add next 3 ingredients. Cook, covered, for 5 minutes and then spoon into tartlet shells.

In a bowl, whisk together remaining ingredients and pour into the shells; bake for 20-25 minutes. Serve hot or cold.
