*DRUNKEN SAUERKRAUT*

3 strips bacon, chopped
1 cup finely chopped onion
1 (2 lb) pkg sauerkraut, rinsed and drained
2 tbsp brown sugar
1/2 tsp caraway seeds
1 (12 oz) can beer or apple cider
3/4 cup grated carrot
1 tbsp chopped parsley

Saute the bacon in a Dutch oven until all the fat is rendered, but is not browned. Add onion; cook, stirring occasionally, about 4 minutes, or until softened. Stir in next 4 ingredients and bring to a boil. Lower heat; simmer, partially covered, 1 hour. Add carrot. Simmer, partially covered, 30 minutes longer.

If mixture is to wet, raise heat slightly; cook, uncovered, a little. Season with salt and pepper. Sprinkle with parsley. Serve 6-8
