GRILLED SHRIMP WITH HERB

Category: Grilled Starters

1/2 cup plus 2 tbsp olive oil, divided use
1/3 cup lemon juice
1/4 to 1/2 tsp hot pepper sauce
1/2 cup coarsely chopped mixed fresh herbs (basil, parsley, sage, thyme and oregano)
1 tbsp minced garlic
Salt and pepper, to taste
1 1/2 lbs shrimp, peeled and deveined.

Heat grill to medium-hot. In a large bowl, combine 1/2 cup olive oil and remaining ingredients, except shrimp; set aside.

In a medium bowl, toss shrimp with remaining 2 tbsp olive oil. Skewer the shrimp and place them on the grill. Turn after first side becomes pink, about 2-3 minutes. Grill until second side is pink or opaque. Add the hot shrimp to the herb mixture. Toss gently and serve immediately.
