BAKED SPINACH AND RICOTTA

3 cups (about 1 1/2 lbs) fresh chopped spinach, squeeze out water
Salt
4 eggs, separated
1 pint ricotta cheese
1/2 cups shredded provolone or mozzarella cheese
1/4 cup grated parmesan cheese
Dash pepper and nutmeg,
1 tbsp butter
Bread crumbs

Butter a 2 quart casserole dish, sprinkle with enough bread crumbs to cover bottom. Preheat oven to 350. Beat egg yolks with the three cheeses, add pepper and nutmeg to taste. Drain the spinach and stir in. Beat egg whites until stiff. Fold into the spinach mixture. Turn all into the casserole dish. Combine melted butter and some bread crumbs to sprinkle over the top of the casserole. Bake for 30-35 minutes.
