POTATO SAUSAGE BAKE

6 medium potatoes, peeled and cubed
3/4 cup green onions, sliced
2 clove garlic, minced
2 tbsp butter
3/4 cup milk
2 egg yolks
Dash pepper
2 tbsp dried parsley flakes
1 lb smoked sausage, sliced or Italian sausage, browned, crumbled and drained
1/2 cup diced mozzarella cheese
2 tbsp grated parmesan cheese
1 tsp dried thyme

Cook potatoes in boiling water until tender. Drain and transfer to a mixing bowl; mash potatoes. Add next 6 ingredients; beat until light and fluffy. Stir in next 3 ingredients. Spoon into a greased 2 quart baking dish. Sprinkle with thyme. Bake, uncovered, at 400 for 30 minutes or until lightly browned and heated through. Serves 6
