POTAOTES, PEPPERS AND KIELBASA CASSEROLE

2 large red or green or red bell pepper, cored and seeded, cut into 1 1/2 inch pieces
2 medium onion, cut into thin wedges
1 lb small red skinned potatoes, about 8, halved
Parsley, garnish
12 oz kielbasa, casings remove and cut into 1/2 inch thick slices
1/4 tsp salt and pepper
1/4 cup olive oil
1/2 cup heavy cream

Preheat oven to 400. Place first 4 ingredients; sprinkle with salt and pepper. Toss with oil. Transfer mixture into a 1 1/2 quart casserole dish. Cover and bake for 45 minutes. Add cream. Cover and bake an additional 10 minutes. Sprinkle with parsley.
