COUNTRY CAFE POTATO PATTIES

4 cups mashed potatoes, without milk or seasoning, cooled
1 cup shredded muenster cheese
1/2 cup flour
1/4 cup chopped parsley and fresh chives or thinly sliced green onions
1 tsp dry leaf thyme or sage, crushed
1/2 tsp salt
1/4 tsp pepper
3 eggs, slightly beaten
2 eggs
1 tbsp water
1/2 cup flour
Vegetable oil
In a bowl, combine first 9 ingredients listed; mix well. Using 1/2 cup of potato mixture per patty, form into 16 (2 1/2 inch) round patties. Place on a cookie sheet. Cover with plastic wrap and refrigerate at least 4 hours or freeze 1 hour or until firm and can handle to coat.
In a shallow dish, combine 2 eggs and water; blend well. Dip cold patties into beaten egg mixture and then into flour. Heat aobut 1/4 inch oil in a skillet and fry patties about 2 minutes on each side or until golden brown, crisp and heated through. Serve hot. Serves 8
