STICKY CHICKEN

15 boneless, skinless chicken thighs or legs

Sauce
1/2 cup favorit bbq sauce
1/4 cup soy sauce, red wine vinegar and liquid honey or maple syrup
1 tbsp chili powder, Dijon mustard and grated gingerroot
2 tsp minced garlic
1 tsp ground cumin

1 tbsp cornstarch plus water blended to make a slurry

Preheat oven to 400. Spray a 13x9 inch baking pan with cooking spray. Arrange chicken in a single layer in the pan.

Whisk together the sauce ingredients in a bowl and pour over chicken. Turn pieces to cak. Bake, uncovered, for about 40 minutes or until chicken is no longer pin in the center. Remove chicken from pan and keep warm. Carefully pour sauce from pan into small pot and add cornstarch mixture to sauce. Cook until sauce is bubbly and thickened, about 1 minute. Serve hot chicken with extra sauce on top. Serves 8
