SOUTHERN PECAN CHEESECAKE

Crust
1 1/2 cups quick oats
1/2 cup finely chopped pecans
1/2 cup packed brown sugar
1/3 cup melted butter
Filling
5 (8 oz) pkg cream cheese, softened
1 2/3 cup packed brown sugar
5 eggs
1 tsp vanilla extract
2 cups chopped pecans, divided
Whipped topping
Preheat oven to 350. Crust: Place oats in food processor and process until consistency of flour. Combine with remaining ingredients and press into bottom of a 10 inch springform pan. Chill while making filling.
Filling: Beat cream cheese until fluffy; slowly add brown sugar; mix well. Add eggs, one at a time, beating well after each addition. Stir in vanilla and half the nuts. Pour over crust and bake for 1 hour and then turn off the oven leaving cake in oven for 30 minutes.
Remove cake from oven and run a knife around the edge of it. Let cool to room temperature; chill 8 hours. Remove sides of pan. Press additional chopped pecans around sides and pipe with whipped cream.
