1/4 cup of cooking oil
1 lb smoked sausage, sliced
2 cups chopped green pepper
1 cup chopped red pepper
1 1/2 cups chopped green onion, sweet onion and celery
2-3 cloves minced garlic
1 (14.5 oz) can tomatoes
1 (15.75 oz) chicken stock
3/4 cup Southern Comfort
1 1/2 tsp thyme
1/2 tsp cayenne pepper
3/4 tsp black pepper
1 1/2 tsp salt
1 3/4 cups converted rice
2 tbsp Worcestershire sauce
1 lb boneless chicken or peeled shrimp or 50/50 of each
In a large pot, saute sausage in cooking oil until lightly browned. Remove sausage from pot and saute chicken until cooked. Remove chicken and sauté onions, celery, garlic, green and red peppers until tender. Then add tomatoes (with liquid), thyme, salt, black pepper, and cayenne pepper, and cook for 5 minutes. Stir in rice and add chicken stock, Southern Comfort, and Worcestershire sauce. Bring to a boil and then reduce to a simmer, add sausage and chicken (if using shrimp add at this time). Cook uncovered, stirring occasionally, for 30 to 45 minutes or until rice is done (shrimp also if used). If rice is not done and pot is looking dry, add a 50/50 mixture of water and Southern Comfort as needed.
