APPLE SPICE MUFFINS

1 1/2 cups flour
3 tbsp oats
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg and cloves
1/4 tsp salt
1/2 cup raising
2 cups diced apple, about 2 Granny Smith
3/4 cup milk
1/2 cup packed brown sugar
1/4 cup apple sauce
1 egg white, beaten

Preheat oven to 350. Spray a muffin pan with nonstick cooking spray and sprinkle with flour. In another bowl, stir together dry ingredients and fold in apples and raisins.

In another bowl, combine remaining ingredients and mix with dry ingredients and stir just until combined being careful not to over mix.

Using an ice cream scoop, fill muffing cups. Bake 20-30 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before turning onto wire rack.
