1/4 cup vegetable oil
1/2 cup applesauce
1 cup sugar
2 eggs
1 tsp vanilla extract
1 cup flour
1 cup whole wheat flour
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp salt
1 1/2 cups diced apple, about 1 Granny Smith
1/2 cup raisins and chopped walnuts
Preheat ovent to 400. Spray a muffin pan with nonstick cooking spray. Beat first 2 ingredients for 2 minutes. Add eggs, one at a time, beating well after each addition, and then vanilla. Beat for 1 minute.
In another bowl, stir together dry ingredients and fold in apples, raisins and nuts. Add dry ingredients to liquid mixture and stir just until combined being careful not to over mix.
Using an ice cream scoop, fill muffing cups. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before turning onto wire rack.
