ITALIAN SAUSAGE SQUARES

1 lb ground Italian sausage
1 tbsp butter
8 mushrooms, sliced
1 medium red onion, chopped
1 clove garlic, minced
12 eggs, beaten
1 cup milk
8 oz shredded mozzarella or provolone cheese
2 medium tomatoes, peeled and chopped
1/2 tsp crumbled oregano, salt and pepper

Crumble and brown sausage in skillet. Pour off grease; drain on paper towels and place into a large bowl. Put butter in skillet and cook mushrooms, onion and garlic until onion is transparent. Stir in sausage. Blend in remaining ingredients and mnix well. Pour into a greased 13x9 inch baking pan and bake at 400 for 30 to 35 minutes or until knife inserted in center comes out clean.. Serves 8-10
