RICE AND FISH BAKE

1 1/2 lbs fish fillets, cod, haddock or Pollock
2 tbsp lemon juice and butter
1 cup chicken broth
3 cups cooked rice
2 eggs, beaten
2 slices bread, torn into small pieces
1/2 cup chopped celery
1/3 cup chopped onion and green bell pepper
1/4 cup chopped fresh parsley
1/2 tsp poultry seasoning and salt
1/4 tsp pepper
1/2 cup shredded Swiss cheese

Simmer fish in water to barely cover. Add lemon juice and cook until fish flakes, about 10 minutes.

In a saucepan, melt butter in broth. Add fish and remaining ingredients except cheese. Mix well and turn into a lightly greased shallow casserole dish.

Preheat oven to 350. Cover casserole dish and b ake 30 minutes, remove cover and sprinkle with cheese. Bake an additional 15 minutes or until cheese melts. Serves 6
