HONEY-GLAZED TURKEY BREAST

1 (5 lb) turkey breast
Salt and pepper, to taste
1/3 cup honey
3 tbsp Dijon mustard
1 1/2 tsp dried rosemary
Preheat oven to 325. Remove skin from brease and discard; place in roasting pan. Season with salt and pepper.
In a small bowl, mix together remaining ingredients. Pour half the glaze over the turkey and bake, uncovered, for 2 hours or until thermometer registers 170-175 degrees. If needed, add a little water to the bottom of the pan during baking. During the last 15 minutes of baking, brush remaining glaze over turkey.
