SUMMER SQUASH CASSEROLE

2 1/2 lbs yellow squash
1/2 cup butter
3/4 cup chopped onion
15 Ritz crackers, crumbled
2 eggs, beaten
1 jar jalapeno cheese spread
Salt and pepper, to taste
1 1/2 cups Ritz crackers, crumbled
1/2 cup butter, melted

Grease a casserole dish. Slice squash, cook until tender. Saute onion in butter and mix with squash. Add next 5 ingredients and pour into casserole dsih. Mix together last 2 ingredients and sprinkle over casserole. Bake at 350 until bubby.
