APPLE RAISIN MUFFINS

1 1/2 cups apples, peeled, cored and chopped
1 cup raisins
2 tbsp sherry
1/2 cup sugar
3/4 cu cream
1/2 cup butter, softened
2 tsp mixed spices
2 eggs
2 cups flour
3 tsp baking powder

Preheat oven to 400. Grease muffin pan. Put first 3 ingredients into a bowl; set aside. Put the next 3 ingredients in another bowl and mix well. Add the remaining ingredients plus the apple mixture and blend just until combined. Spoon into pans and bake for 15-20 minutes.
