SALMON AND CHEESE LOAF

1 (1 lb) can salmon, drained and flaked, reserving liquid
1 egg, beaten
1 cup dry breadcrumbs and grated cheddar cheese
1 tbsp butter, melted
1/2 cup chopped celery and onion
1/4 cup chopped green or red bell pepper
1 tbsp lemon juice
1 tsp salt
Pepper, to taste

Preheat oven to 350. Mix ingredients well adding reserved liquid to combine. Shape into a loaf. Bake in a loaf pan for 30 minutes. Allow to rest before slicing.

NOTE: Also good as patties but reduce cheese to about 1/2 cup and then fry in oil and butter and browned on both sides, about 8-10 minutes.
