SALMON LOAF

2 tbsp butter
2 tbsp flour
1 cup milk
1 (1 lb) can salmon, drained and flaked
1/2 cup mayonnaise
1 egg, beaten
1 cup dry breadcrumbs
1/2 cup chopped celery and onion
1/4 cup chopped green or red bell pepper
1 tbsp lemon juice
1 tsp salt
Pepper, to taste
1/2 lb Velveeta
1/4 cup milk

Preheat oven to 350. Make white sauce with butter, flour and milk. When thickened, add remaining ingredients, except Velveeta and milk. Mix ingredients well and shape into a loaf. Bake in a shallow pan for 1 hour. Allow to rest while making sauce.

Meanwhile, melt cheese and milk over low heat, stirring until smooth. Serve over salmon loaf.
