SPICED ACORN SQUASH

4 medium-sized acorn squash, cut in half with seeds removed
1/2 cup packed brown sugar
1/2 tsp nutmeg and salt
1/4 tsp ground cumin
8 tbsp melted butter
1/2 cup maple syrup
8 (1/2 inch) pieces of bacon
About 2 cups boiling water
Preheat oven to 350. In a small bowl, combine brown sugar, spices and melted butter; stir to combine.
Arrange squash in a shallow casserole dish large enough to hold them all. Spoon equal amounts of spiced butter into each hollow and pour about tsp maple syrup over them. Top with a piece of bacon. Add boiling water to the baking dish, about 1 inch deep. Bake for 1 hour, or until the squash can be easily pierced with the tip of a knife. Serves 8
