SQUASH CASSEROLE

2-3 tbsp butter, melted
1 medium sweet onion,chopped
1 1/2 lb yellow squash, trimmed, peeled and sliced
1 chicken bouillon cube
2 tbsp sugar
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese
3 eggs, beaten
1 tsp salt
1/8 to 1/4 tsp pepper
1/2 cup butter, melted
1 cup cracker crumbs, bread crumbs or stuffing mix
1 cup shredded cheddar cheese

Preheat oven to 350. Melt 2-3 tbsp butter in a skillet and saute onions until translucent. Add squash, stirring occasionly, for 1 minutes. Cover tight with lid and cook until soft and very tender, stirring occasionally. Crush bouillon and stir it along with the sugar into mixture to dissolve it. Remove pan from heat, cool slightly. Add next 5 ingredients.

Melt butter, combine dry crumbs of choice. Add to squash mixture, mixing well. Pour into a 2 quart casserole dish and bake about 25 minutes. Top with grated chese and continue baking 8-10 minutes. Serves 6
