1/3 cup any biscuit mix
1/4 cup fresh parmesan cheese
1/8 tsp salt and pepper
2 slightly beaten medium eggs
2 cup shredded zucchini, unpeeled
2 tbsp butter
In a large mixing bowl, stir biscuit mix, parmesan cheese, salt, and pepper. Stir in the eggs until the mixture is moistened. Fold the zucchini into the mixture. Melt the butter over medium heat in a large skillet. Drop by heaping tbsp into the preheated skillet and cook 3 minutes each on each side or until brown. Serve as an appetizer or as a side dish with your meal.
Variation: Melt cheese (any type) over the rounds
