GINGER-GLAZED SALMON

4 (6 oz) salmon fillets (about 1 inch thick)
Cooking spray
1/2 cup pineapple preserves
1 1/2 tbsp lime juice
1 tbsp Dijon mustard
1 1/2 tsp bottled ground fresh ginger
1 tsp minced garlic
1 tsp soy sauce
1/4 tsp salt and pepper

Preheat oven to 425. Place fillets in a 13 x 9 inch baking dish coated with cooking spray. Combine preserves and remaining ingredients; pour over fillets. Bake at 425 for 15 minutes or until fish flakes easily when tested with a fork. Serves 4
