4 (8 oz) salmon fillets, 1/2 to 3/4 inch thick
1 to 2 tbsp cracked pepper
2 tbsp unsalted butter
Juice of 1 lime
Pinch Salt and pepper, to taste
1 lime, seeded and cut into quarters, for garnish

Rinse salmon in cold water; drain and pat dry. Sprinkle with pepper on both sides pressing into fish lightly. Heat a heavy skillet on medium-high heat. Melt butter and salmon. Cook until sides look just opaque, 3-5 minutes. Turn fillets, sprinkle with lime juice and salt and continue cooking until fish is done, another 3-5 minutes. Garnish with lim wedges and serve. Serves 4
