FARFALLE WITH SALMON AND VODKA IN PINK SAUCE

1 cup chopped parsley
1 onion, chinly chopped
1/4 lb butter
1 1/2 lbs fresh salmon, cut into 4 serving pieces
3 bunches tarragon
2 cups vodka
1 quart whipping cream
1/2 quart tomato sauce
10 oz smoked salmon
1 cup mascarpone cheese
Few pink peppercorns
Salt and pepper, to taste
2 lbs bowtie pasta, cook al dente

While pasta is cooking, brown onions lightly in butter. Add tarragon and peppercorns. Add salmon and cook 3-4 minutes. Add vodka, after 1 minute, add whipping cream and next 5 ingredients. Cook for 10 more minutes. Add drained pasta and saute for 1 minute. Add the chopped parsley and serve. Serves 4
