*TUNA BROCCOLI CASSEROLE*

1 (10 oz) pkg frozen chopped broccoli, cooked according to package directions
1/2 cup chopped onion
3 tbsp butter and flour
1 tbsp prepared mustard
Dash cayenne pepper
1 tsp salt
1 1/2 cups milk
1 1/2 cups shredded American cheese
1 (6 1/2 oz) can tuna, drained and broken into chunks, or 1 (7 1/2 oz) can salmon, drained, flaked and bones removed
3 cups cooked egg noodles

While broccoli is cooking prepare sauce, in a saucepan saute onion in butter until tender but not brown. Stir in flour, mustard and pepper. Add the milk all at once. Cook and stir until thickened and bubbly. Add the cheese and stir until melted. Remove from heat.

Combine tuna, broccoli and 3/4 cup sauce. Mix with noodles. Transfer into a greased casserole dish. Bake, covered, at 375 for 15 minutes or until heated through.

Reheat the remaining cheese sauce, adding additional milk, if necessary. To serve, spoon remaining sauce over casserole and sprinkle with buttered bread crumbs and toasted chopped almonds. Return to oven and heat until crumbs are toasted.
