CHICKEN RICE PILAF - Easy

2 tbsp vegetable oil
2 smoked sausage, bratwurst, Italian sausage, andouille or other flavorful link sausage, cut lengthwise and diced
1 onion, diced
2 ribs celery, diced
1 large green or red bell pepper, diced
1 bay leaf
1 tsp thyme
6 chicken thighs, skin removed, if desired
2 cups uncooked rice
3-4 cups chicken broth
Heat oil in a Dutch oven. Add sausage and diced vegetables to the Dutch oven. Cook about 5 minutes or until vegetables are softened. Add next 4 ingredients. Add broth plus water to equal 4 cups. Season with salt and pepper. Bring to a boil; cover, reduce heat to simmer and cook 30 to 40 minutes or until chicken is cooked and rice is tender. Serves 6
