CHEESE POTATOE PUFFS

2 eggs, beaten
12 medium potatoes, peeled, cooked with 1/2 tsp salt and mashed
3/4 cup butter
2 cups shredded cheddar cheese
1 tsp minced parsley or chives
1 cup milk
1 tsp dried minced onion
1/8 tsp garlic powder
2 eggs, beaten
2-3 tbsp butter, melted

To the mashed potatoes, add remaining ingredients except eggs and butter; mix well. Fold eggs into mixture and pour into a greased 3-quart baking dish. Drizzle with butter and bake at 350, uncovered, for 40 minutes or until lightly browned. Serve immediately.
