MANDARIN CHICKEN AND VEGETABLES

Category: Chicken

1 lb boneless, skinless chicken breasts, cut into strips
4 tbsp oil, divided
2 clove garlic, minced
2 cups broccoli flowerets, cut
2 onions, cut into wedges
1 carrot, cut in julienne strips
1/2 lb bean sprouts and sliced mushrooms

Sauce
2 tbsp cornstarch
1 1/4 cups water
1/3 cup corn syrup and soy sauce
1/4 tsp crushed red pepper

Mix ingredients to sauce. In a skillet, heat 2 tbsp oil over medium-high heat. Add chicken and garlic. Stir-fry 5 minutes or until tender. Remove from skillet. Heat 2 tbsp oil and add next 3 ingredients; stir-fry 3 minutes. Add mushrooms and sprouts and stir-fry 1 minutes or until vegetables are tender-crisp. Return chicken to skillet. Restir sauce and mix into skillet; stirring constantly. Bring to a boil over medium heat and boil 1 minute. Serve over rice.
