BAKED CHICKEN AND POTATOES - Easy

Category: Chicken

1 (3-4 lb) fryer, cut into serving pieces
6 potatoes, peeled and quartered
1 cup crushed tomatoes
2 tbsp parsley
1 tsp basil
2 clove garlic, minced
Salt and pepper, to taste
1/4 cup grated parmesan cheese
3 tbsp vegetable oil

Wash and dry chicken pieces. Put enough oil in a large roaster to cover bottom of the pan. Place the chicken in the pan and place potatoes between the chicken pieces. Sprinkle remaining ingredients in order given over the chicken and potatoes. Bake t 375 for 1 1/4 hours or until chicken is done. Serves 4
