SPINACH, CHICKEN AND MUSHROOM QUESADILLAS

1 (12 oz) box spinach souffle
8 flour tortillas
1 cup shredded Monterey Jack cheese
6 oz cooked chicken, chopped
8 oz mushrooms, sliced thin
1 cup sour cream

Cook spinach souffle in microwave according to directions on box.

In a large skillet or griddle, heat flour tortillas, turning once. Spread with spinach souffle and sprinkle each tortilla with cheese, chicken and mushrooms. When cheese begins to melt, fold and remove from heat. Cut in thirds and serve with sour cream. Serves 4
